New All Organic and Biodynamic Wine List Debuts at Caracol Steakhouse

New organic and biodynamic white wines featured and food pairing suggestions from the Caracol restaurant menu include:
Ā Ā Ā Santa Julia Organico Torrontes from Argentina, the only country to produce the highly regarded Torrontes grape. This sustainably produced wine with floral aromas and white peach and herbal notes pairs well with the restaurant's Premium Caracol Seafood Platter with local oysters, ceviche, jumbo prawns, half spiny lobster tail and half king crab leg; or the grilled Pacific yellow fin ahi tuna.
Ā Ā Ā Casa Lapostolle Sauvignon Blanc from Chile, an organically produced, wonderfully balanced hot-weather white wine with intense fruit aromas of sweet citrus and tropical fresh fruit and mineral notes. This pairs well with Caracol's garden greens and spinach salad with cherry tomato confit, strawberries, goat cheese, crispy yucca and crimini bacon viniagrette; or the local mahi mahi from the grill.
Ā Ā Ā Louis Jadot Chardonnay from the winemaker's biodynamic vineyards in France. The richly textured white with aromas of almond, pear, toffee apple and toasty oak matches well with crispy calamari and local Drake Bay shrimp, sweet Peppers, onion and caper tartar sauce appetizer; or the pan-seared Pacific red snapper, shrimp, olive oil, crushed potatoes, tomato, asparagus and bĆ©arnaise sauce.

Ā Ā Ā Organic Zaphy Malbec, a deep red wine from Argentina with violet hues, medium body, delicate tannis and a long fruit-filled finish. The restaurant recommends pairing with its New York strip or filet mignon with a Costa Rican coffee crust and choice of six sauces including spicy mustard, teriyaki, sundried tomato, chimichurri, bĆ©arnaise, tamarind barbeque or horseradish cream.
Ā Ā Ā Caliterra Shiraz from the Conchagua Valley of Chile. The nose of this wine made using sustainable viticulture practices displays aromas of fresh blackberries, dark plums and licorice with an aftertaste of blackberry, spice and earth. It pairs wonderfully with skirt steak smothered with balsamic red onions and served with sides of fresh baby lettuce, cherry tomatoes, hearts of palm, avocado and balsamic vinaigrette and basil mashed potato with sweet cream and butter.
Ā Ā Ā Nativa Terra Reserva Cabernet Sauvignon from Chile. Nativa wines were the first to be organically certified in the country of Chile. The nose of this red contains aromas of ripe red fruit, cassis complemented by cedar and tobacco notes and firm tannins, with an extraordinary balance that pairs well with Caracol's grilled chicken, steaks or a new dessert item, The Best Chocolate Cake You've Ever Tasted, with white Costa Rican coffee ice cream and milk chocolate chantilly.
