Chef Melissa Perello from Frances made a very rich duck liver mousse, which was served like a parfait at the bottom of the cup, topped with a gelee, micro-greens, red onions, herbs, and crisp crouton. It was a beautiful combination of textures, and even though it was very decadent, the onions and herbs balanced the dish perfectly.
