Steps for Building a Smokehouse
- 1). Measure 60 inches up one side of two plywood pieces (the smokehouse sides) measuring 36-by-72 inches. Draw an angled line between the 60-inch point and the other side of the plywood piece. Cut the two pieces across at this line, so they now have a 36-inch side, a 60-inch side a 72-inch side and the angled side will be roughly 37.9 inches.
- 2). Place a plank of 2-by-2 lumber measuring 72 inches flush with the 72 inch sides of both plywood pieces. Secure in place with 2 1/2 inch nails hammered every 10 inches. Repeat on the 60-inch sides of plywood with two pieces of 60-inch 2-by-2 lumber.
- 3). Measure up 24 inches from the 36-inch side of the plywood and mark a line across the planks. Mark three more lines spaced 12 inches apart across the plywood and attach a length of 32-inch 1-by-2 lumber at each line for shelf cleats. There will be four cleats on each side.
- 4). Stand the side panels upright with the 36-inch sides flat on the ground and the cleats facing each other. Place a plank of 36-by-70 inch plywood (the back) over the 72-inch edges of the side panels, flush with the ground so that there is 2 inches between the top of the sides and the back panel.
- 5). Secure the back panel to the sides with 2 1/2 inch nails hammered every 5 inches through the back of the back panel into the 72-inch 2-by-2 planks attached to the edge of the side panels.
- 6). Place a 36-by-58 inch plank of plywood (the smokehouse door) flat on the work surface. Place two hinges 3 inches in from either end of the door, and the third centered between the outer two. Secure half the hinge to the door with 1/2 inch screws driven through the hinge screw holes.
- 7). Position the door over the front of the smokehouse sides, flush with the top of the 60 inch sides, so that there is a 2-inch gap between the bottom of the door and the ground. Secure the other half of the hinges to the side of the smokehouse and attach a door clasp on the opposite side of the door from the hinges in the same manner you attached the hinges.
- 8). Lay a piece of 38-by-38 inch plywood (the roof) flat on the work surface. Evenly space three pieces of 30-inch 1-by-2 lumber in the center of the roof and secure with nails. Screw around 3 to 4 screw hooks into the 1-by-2 lumber planks and the roof, for hanging fish or other cuts of meat from.
- 9). Place the roof panel with the screw hooks down over the top of the smokehouse. It will angle down, and there will be a slight lip over all sides. Secure the lid down with nails around the perimeter into the sides and back panel.

Place wire racks onto the shelf cleats of the smokehouse. Place an electric hotplate on the ground inside the smokehouse and put wood chips or sawdust on top. Place the sensor or an oven thermometer inside the smokehouse, and the dial on the outside of the smokehouse so that you can read the temperature of the smokehouse without opening the door.
