How to Save Hot Peppers
- 1). Rinse the hot peppers under cold water. Remove any dirt and debris from the surface.
- 2). Keep small peppers whole. Cut the large peppers in half with a knife. Remove the seeds, membranes and stems.
- 3). Pour water into a large pot. Bring the water to a boil.
- 4). Place the peppers into the boiling water. Blanch the peppers for three minutes if whole or two minutes if cut in half.
- 5). Prepare a bowl filled with ice water. Remove the peppers from the boiling water. Place them in the ice water bowl for 4 minutes.
- 6). Drain the peppers in a colander. Place them in zippered plastic bags or a vacuum-sealed bags. Remove as much air as possible from the bags, and seal them tightly.
- 7). Label the bags with the date and contents with a marker. Place them in your freezer.
