There are many ways to cook with tea at home. Over the years, I've experimented with many of these cooking methods and found that some of the best recipes come from one simple principle: extracting the concentrated flavor of the tea into a liquid and using it as you would any other cooking liquid.
This recipe for tea-infused vinegar is based on that same principle. It combines the concentrated flavor or the tea of your choice with a cooking medium of vinegar. You can use it in sauces, stews, salad dressings, catchup, pickling brines, marinades or anything else you'd flavor with vinegar. You can also dilute it into a so-called "drinking vinegar" -- a refreshing and healthy beverage made by combining an infused vinegar with cool or warm water.
