    Fruit Kabobs

      Before you hit the beach, gather a few strawberries, pineapples and melons. Create fruit kabobs by cutting fruit in chunks and threading them on skewers. You don't have to have any special order for placing the fruits on the skewer, alternate between colors or size for a look that pleases you. For an extra treat, lightly dust almond shavings or coconuts and arrange in a travel container. Keep kabobs cool by placing them in the ice chest with your drinks. Fruit kabobs are healthy, refreshing desserts that are easy to prepare and can feed many.

    Strawberry Short Scones

      For a heartier dessert option, take along premade scones filled with strawberries. Don't spend all of your time in the kitchen baking desserts from scratch. Visit your local grocer's freezer section for freezer-to-oven scones. You'll need several packages of fresh strawberries, cool whip, a package of blueberries and some powdered confection sugar. Slice fresh baked scones in half and allow cooling to room temperature. Fill each scone, shortcake style, piling on the strawberries first. Add a scoop of cool whip, a blueberry or two and dust lightly with confection sugar. To keep them organized, set each scone inside of a cupcake wrapper and refrigerate. Store refrigerated scones in an insulated cooler bag for your day on the sand. Prepare enough for all the beachgoers in your party. Your scones are a light substitution for heavy cakes or messy pies and can be made ahead and stored for your trip.

    Pudding Parfait

      Parfaits give you the flavors you enjoy in a little pot of yummy goodness. The layering of a parfait allows you to dig deep to the bottom of the parfait cup and taste the infusion of all the ingredients you've layered in. Make chocolate pudding parfaits for your beach trip. Start the first layer with chocolate cake cut into circles slightly smaller than your cup. Add chocolate pudding next, making sure to only scoop a spoonful or two depending on the size of your parfait cup. Use cool whip, chocolate or peanut butter morsels, then repeat each layer until you reach the top. Leave room for a heavy helping of cool whip and drizzle the finished parfait with caramel or chocolate syrup. For a parfait dessert that looks as amazing as you've made it taste, use clear cups so you can see each layer. Parfaits are easy to eat and serve as they are contained neatly in the cups. Free overnight and allow to thaw while your en route for the beach. Store frozen parfaits in your ice chest for beach excursions that will take longer than an hour's drive.

      Cupcakes are simple treats for your day at the beach. Even if you're not remotely interested in spending a few minutes in the kitchen mixing up a batch of batter for homemade cupcakes, stop by your local bakery for a few dozen. If you don't have a cupcakery in your area, make a stop or two to area bakeries until you get a good variety of cupcake flavors you love. Cupcakes are a no-fuss dessert that look as delicious as they taste. Cupcakes are lighter than cakes and easier to take along to the beach. For large groups, cupcakes can offer many flavor options, giving your guests several to choose from.
