Creamy Roasted Potatoes is a special side dish perfect for Christmas and Easter with your glorious ham. The potatoes are cut into chunks rather than being sliced, so they are crisp on top and creamy all the way through. Yum.
Ingredients
- 2 pounds Yukon Gold potatoes, peeled
- 3 cloves garlic, minced
- 1 cup light cream
- 1 (8 ounce) package cream cheese, cubed
- 2 cups shredded Gruyere cheese
- 1/4 cup grated Parmesan cheese

Preparation
Preheat oven to 375°F. Cut the potatoes into 1" cubes and place in greased 2-quart casserole dish. Top with garlic.
In medium microwave-safe bowl, combine cream and cream cheese. Microwave on high for 2 minutes; remove and stir with a wire whisk until creamy. Stir in Gruyere cheese. Pour over potatoes and stir to mix.
Arrange the potatoes in an even layer and top with the Parmesan cheese. Bake for 45-55 minutes or until potatoes are tender, sauce is bubbling, and the top is golden brown.
