German Style Fish in Mustard Sauce

    • 1). Combine 2 cups of water, 2 cups of vinegar, 1 medium sliced sweet onion, and 6 peppercorns in a skillet. Place it on the stovetop over high heat to bring the mixture to a boil.

    • 2). Place 2 lbs. of cod fillet over the heated mixture in a single layer.

    • 3). Reduce the heat to a simmer. Cover the skillet with a lid and allow it to cook for 10 minutes. The fish will flake once it finishes cooking.

    • 4). Place the fish on a warm platter so that it does not cool immediately.

    • 5). Melt 2 tablespoons of butter in a saucepan. Once the butter melts add 2 tablespoons of all-purpose flour slowly. Mix the butter with the flour when you add it.

    • 6). Add 3 tablespoons of Dijon mustard, 1 teaspoon of salt and 1 tablespoons of sugar. Stir until all the ingredients mix well.

    • 7). Remove the sauce from the stovetop. Add 2 tablespoons of heavy cream and stir until the sauce has a creamy and smooth texture.

    • 8). Pour the sauce over the codfish fillets and serve immediately.
