SubAstor is, as the name implies, under the Astor in Vila Madalena. Opened in 2009, the São Paulo bar has thrived in its hidden underground niche beyond velvet drapes, and success has come hand in hand with innovation.
The latest change for the speakeasy came in the person of bartender Fabio La Pietra, an Italian from Puglia who, though in his 20s, has quite a bit of experience, thanks to his start in mixology at the age of 14 or 15.
His background includes work at the Montgomery Place in Notting Hill, London and hotel bars such as the one at Grand Hotel Villa Serbelloni in Bellagio at Lake Como, Italy.
La Pietra, who had already visited SubAstor as a guest bartender - when, in an interview, he compared cocktails to poetry - took over its translucent alabaster counter in March 2013 and started the about-face right away. A few months later, he and SubAstor won 2013 Bartender of the Year and Cocktail List of the Year from Veja SP (vejasp.abril.com.br/materia/bares-comer-beber-2013)
Classics such as the Negroni are on the cocktail menu. So are pre-Prohibition drinks such as the Stone Sour by black bartender Tom Bullock (1872 - 1964), writer of "The Ideal Bartender" (1917).
Join La Pietra in his discovery and enjoyment of Brazil with the cocktails which tap deeply into native ingredients and customs. His Palm Beach Special Palm Beach Special is made from gin with an infusion of fresh açaí from Belém, Cocchi vermouth, grapefruit juice and hops.
The brightly colored drink is all the more beautiful with a picture of Carmen Miranda clipped onto the glass.
The Amazon returns in Walker on the Beach: there's a touch of tucupi, manioc sauce in the mix of Johnny Walker Black Label with bubbly coconut water and the Yemanjá cordial, made from algae.
