Marzipan Swirl Fudge
Marzipan Swirl Fudge is an easy chocolate-almond fudge with a delicious swirl of marzipan running throughout! I based this fudge off of one of my favorite fudge recipes--it has a rich and creamy texture, and it doesn't require extensive beating to set up. If you're an almond lover, you'll love this beautiful and unique fudge.
This recipe works well with store-bought marzipan, but if you have homemade marzipan, you can certainly substitute that. If you would like to make your own, I suggest starting with this traditional marzipan recipe.

Traditional Marzipan
Ingredients
- 4 oz marzipan
- 3 oz (1/2 cup) white chocolate chips
- 2 tbsp heavy cream
- 12 oz evaporated milk
- 4 1/2 cups granulated sugar
- 1/4 tsp salt
- 18 oz (3 cups) chocolate chips
- 8 oz butter, cubed
- 1 tsp vanilla extract
- 3/4 tsp almond extract
- Yield: 9x13 pan of fudge
Preparation
1. Line a 9x13-inch pan with foil and spray the foil with nonstick cooking spray.
2. Prepare the marzipan swirl first: grate the marzipan using a cheese grater, and place the shredded marzipan, the white chocolate chips, and the cream in a microwave-safe bowl. Microwave in 30-second increments, whisking after every 30 seconds, until the white chocolate is melted and the mixture is smooth. It will be more of a paste than a liquid.
Set aside for now.
2. Place the evaporated milk, sugar, and salt in a medium saucepan over medium-high heat, and stir until the sugar dissolves. Wash down the sides of the pan with a wet pastry brush to prevent sugar crystals from forming. Bring the mixture to a boil, and once boiling, insert a candy thermometer. Continue to cook the candy, stirring frequently, until it reaches 232° Fahrenheit (111°C) on the thermometer.
3. Once at 232°F, remove the pan from the heat and add the chocolate, cubed butter, and both extracts. Stir until the chocolate melts and the fudge is smooth.
4. Working quickly, scrape the fudge into the prepared pan and smooth it into an even layer. Dollop the marzipan over the top of the fudge and use a knife to swirl the two together. The fudge will start to set soon after you pour it, so don't hesitate when adding the marzipan.
5. Let the fudge cool and set at room temperature overnight, or in the refrigerator for at least 3 hours. When set, remove the fudge and peel off the foil backing.
Use a large sharp knife to cut the fudge into 1-inch pieces to serve.
6. Wrap the Marzipan Swirl Fudge well and store it in an airtight container in the refrigerator for up to a month. For the best taste and texture, let it warm up for a bit at room temperature before serving.
