Johnnycakes
Definition: Johnnycakes are simply a thin cornbread-like batter poured on to hot, greased, cast iron skillets. These were one of America's first pancakes. The origins of the name have always been a matter of debate. Some say it comes from the phrase "journey cake," because it was something easy to prepare while on the trail. Other claim it's a mispronunciation of a Native American term for a similar recipe, the "Shawnee cake."
