How to Clean a Restaurant-Type Deep Fryer
- 1). Power off the deep fryer, and unplug it. Check the fryer thermometer; when it reaches 150 degrees Fahrenheit you can begin cleaning.
- 2). Remove the deep-fryer baskets and place them in the dishwasher or sink. Wash them as you would a dish.
- 3). Place a large, solid container underneath the drain spout. Open the spout, and allow the oil to drain into the bucket.
- 4). Remove and scrape away any food debris from the fryer with a spatula and towels. Discard all waste in the oil bucket or trash bin.
- 5). Close the drain spout. Fill the fryer with fresh water from the faucet. Add 5 or 6 drops of liquid detergent to the water.
- 6). Plug the unit into the power outlet, and turn it on. Allow the soapy water to boil for 10 minutes.
- 7). Turn the fryer off, and allow the soapy water to cool to 150 degrees Fahrenheit.
- 8). Place a large bucket underneath the drain spout. Unplug the drain and allow the soapy water to collect in the bucket.
- 9). Fill the fryer with a solution that is 90 percent fresh water and 10 percent vinegar. Wash the inside of the fryer with the solution and a rag to remove any soapy residue. Allow the solution to empty down the drain and collect in the large bucket underneath the drain spout.

Spray a degreasing solvent on the exterior of the fryer to remove any grease. Allow the solvent to sit on the fryer for 10 minutes. Wipe it off with a clean rag. - 11
Dry the fryer unit with a dry cloth. Plug the drain. It is now ready to refill with oil.
