How to Grill Outside in Winter

    • 1). Dress warmly. Even though you will be standing near a fire/heat source and might be tempted to put on a light jacket, don't do it. Dress for winter grilling in layers--long underwear, a sweater or turtleneck and a warm jacket. Be sure to keep your extremities warm and wear good, dry boots and a pair of gloves or mitts (the ones that leave your fingers out are great for grilling).

    • 2). Consider that in cold weather your gas grill won't perform as well as when it's warm out. The cold will mean the grill won't heat up as fast or stay as warm, and the cold lowers the pressure in the gas tank so it won't work as well either. The answer is to be sure your tank is full before you start.

    • 3). Keep the lid closed. The heat from the grill will escape more quickly in the cold temperature and your food will take longer to cook. Keep the lid closed to help the grill warm up, and once it's warm, cook your food at a higher temperature than you would during the summer.

    • 4). Ensure your food is properly cooked by using an instant read meat thermometer (available at home, barbecue and kitchen stores). Go by the temperature the thermometer shows; don't trust your internal clock to tell you when the food is ready.
