A big bowl of chili with a salad and some warm cornbread is what I've picked out for dinner tonight. Start with a healthful turkey chili recipe and combine it with low-fat cornbread and a green salad. When dinner's over, enjoy a few chocolate dipped strawberries. Tonight's Entree - Tasty Turkey Chili

Choose low-fat ground turkey for this recipe (be sure to read the labels -- not all ground turkey is low in fat). Our Home Cooking Guide at About.com offers this easy and healthy recipe. In fact, it's so easy; kids can make it (for a fun family meal or when mom or dad need a night off from kitchen duties).

Low-Fat Cornbread

I want to keep the fat content down with this meal so you can have a little room for chocolate dipped strawberries later on, so I chose a recipe that uses low-fat buttermilk. The recipe calls for both refined and whole wheat flour, which is okay, because the cornmeal is a pretty good source of fiber.

Add a Salad

I love to add a salad to a meal because it's an easy way to boost vegetable intake, plus it makes the meal more interesting. For tonight's dinner, I've picked out mixed greens and peas, which is dressed with heart-healthy olive oil, mustard and lemon juice.

Complete Your Meal

Water is always a good choice for a healthy beverage, or you can serve low-fat milk.

For dessert, try dipping some large fresh strawberries into dark chocolate.

  • dark chocolate (or milk chocolate if you prefer)
  • canned diced tomatoes
  • tomato paste
  • chicken broth
  • canned black beans
  • canned pinto beans
  • frozen corn
  • green onions
  • garlic
  • canola oil (use for both cornbread and chili)
  • lemon juice
  • olive oil
  • Dijon mustard
  • chili powder
  • cumin
  • dried thyme
  • salt and pepper
  • low-fat milk, water or your favorite beverage

Meal Preparation Tips

Here's how I'd make this meal -- but if you have another method, that's fine. Start the chili and once it's cooking, move on to the cornbread, and get it in the oven. Then prepare the salad. Melt the chocolate and dip your strawberries after dinner (or you can make them in advance and keep them in the refrigerator).
