Free recipes for chia seed are really yummy salba seeds recipes.
They are really worth the effort to make.
All have two things in common.
One they are free.
Two they all contain chia seeds.
Enjoy making these Mexican free recipes for chia seeds:- Spicy Pork with Mexican chia rice.
This takes about 3 hours from start to table.
Serves 4 portions.
Spicy Pork A light frying oil.
Salt and pepper 1lb/454g pork tenderloin fillet diced and fat removed.
6 fat free rashers of bacon roughly chopped.
1 onion roughly chopped.
1 Tbl spoon of Salba seeds 2 Garlic cloves finely chopped.
2 Tsp Oregano.
2 Tsp Cumin.
1/4 Tsp ground cloves.
1&1/2 pints/852ml of chicken stock 4 Jalapeno chillies, finely chopped.
2 Ripe tomatoes finely chopped.
2 x 400g cans pinto beans drained.
small handful of fresh coriander finely chopped.
Mexican chia rice 1 Onion finely chopped.
1 Tbl spoon of Chia seeds.
1/2 Tsp ground cinnamon.
1/2 Tsp ground cumin.
1 Garlic clove finely chopped.
1/2 red pepper finely diced.
400g can of Kidney beans drained and rinsed.
7oz/198g cherry tomatoes halved.
400g tin of sweet corn.
1lb/545g cooked long grain rice.
One handful of fresh coriander finely chopped.
Juice of 1 Lime.

Preheat a casserole dish sprayed with low fat oil.
Season the pork to taste.
Place the seasoned Pork in the casserole dish with the bacon and fry for 5 minutes.

Now add the Chia, onion, garlic, cumin, oregano and cloves, continue to fry for 1-2 minutes.
Pour in the stock and bring to boil.
Reduce the heat and simmer uncovered for 2 hours stir occasionally.

Add the chillies and beans.
Simmer for a further 30 minutes until most of the liquid has been absorbed.

Mexican chia rice.
Fry the onion, cinnamon, cumin, garlic and red pepper in a light oil for 5 minutes.
Then stir in the tomatoes, sweet corn and kidney beans, fry for a further 4 minutes.
Add the precooked rice and stir until thoroughly heated.
Then remove from heat and add the coriander, lime juice and Salba seeds.
Season to taste.

Add the tomatoes and coriander to the Pork, stir well and serve on a bed of Mexican Chia rice.
This is well worth the effort and the chia seeds soak up the stock juices and help to thicken the sauce.
The Jalapenos give a great kick to the slow cooked pork..
