    Lettuce

    • The staple of any salad, lettuce can be eaten as soon as leaves develop. Plants grow to maturity within six to eight weeks. A selection of baby plants can be picked when 3 inches high; leave about 6 inches between the other plants.

    Radish

    • Radishes will sprout as quickly as 21 days from the time seeds are planted. Because these seeds are quick to grow, you can wait until after the last frost to plant. As the plants sprout, give the larger plants room to grow by uprooting the smaller sprouts, leaving more room between the larger ones.

    Green Beans

    • Green bean seeds sprout within two or three days in warm temperatures, and produce beans in about 60 days. Fresh green beans can be picked and eaten just a few days after blossoms are visible.

    Squash

    • Squash are similar to beans in that they sprout quickly in warm weather. Summer squash grow to maturity in about two months. Squash should be picked when 3 or 4 inches in length, leaving the most robust plants in the ground.

    Spinach

    • Spinach seeds mature within six to eight weeks, and can be harvested when it's still young.
