Easter Treats to Make
- Make a batch of cupcakes with white icing. Bend a piece of red licorice into an arch and push the ends into the sides of the cupcake, making the shape of a basket handle. In a bowl, blend sweetened coconut with three to four drops of food coloring and mix until the coconut is colored. Sprinkle some of the coconut onto each iced cupcake and place three or four jelly beans into the "nest" you have just created. Tie a small ribbon bow on the licorice handle for an extra decoration.
- Purchase disposable clear plastic icing bags. Fill the bags with orange jelly beans, leaving about 3 inches unfilled at the top. Cut green tissue paper into two 8-inch squares and lay them on top of each other. Hold the squares from the center, giving them a little twist so that you get a cone-shaped carrot top. Place the tissue, twisted end down, into the bag and secure it to the bag with a twist tie or a green ribbon tied into a bow.
- In a small bowl, combine ¼ teaspoon of water, and two to four drops of food coloring. Add ½ cup of flaked coconut and stir until the coconut absorbs the color you added. Spread the mix on a baking sheet to dry. In a saucepan, melt 3 tablespoons of butter over low heat, add about 40 miniature marshmallows and stir until completely melted. Remove from heat and add 6 cups of crisped rice cereal and stir. Divide the warm mixture into a muffin cup tray coated with cooking spray and shape the mixture into individual cups, or nests. Fill the nests with coconut, marshmallows, jelly beans or chocolate eggs. After they cool, remove the nests from the muffin tin.
- Sugar cookies are delicious treats for any holiday. Use any sugar cookie recipe or purchase pre-made cookie dough at the grocery store. Purchase a set of Easter cookie cutters in egg, bunny and chick shapes. Decorate with icing and sprinkles.
